Quaglino’s in St James’s, London is delighted to announce the appointment of Craig James as Head Chef. Craig, 28, formerly Head Chef at Butler’s Wharf Chop House, is a passionate supporter of traditional and ethical farming.
Craig will be serving a new range of typical brasserie dishes with British touches; the a la carte menu will be changing on a regular six week basis to reflect seasonality of ingredients.
As his first seasonal initiative, Craig is pleased to announce in collaboration with the Brogdale Horticultural Trust, ‘The A-Z of Apples’, a daily changing menu featuring lesser known varieties of this much loved fruit.
Available during the month of October for lunch and dinner, customers can select from starters, main courses and desserts, sampling an ‘A-Z’ of intriguing varieties, from the Allington Pippin to the Apez Zagarra.
The Brogdale Horticultural Trust in Kent manages the Defra National Fruit Collections, the largest collection of fruit trees in the world, which are situated on the outskirts of Faversham. Alongside other temperate fruits including pears, cherries, plums, quinces, nuts and soft fruits, there are over 2000 different varieties of apple grown in 150 acres of orchards.
By sourcing apples through the Brogdale Trust, Craig would like to preserve our heritage of fruit and introduce to a wider public the many varieties that are rarely seen in our shops.
